Ordinary people like us could get our hands on it during special occasions like weddings, Christmas, and new year’s day celebrations. So let’s take a moment to applaud Mrs. Mclintock for giving her recipe to strangers. By strangers, I meant us. So without further details, get your pen and paper ready for the recipe.
Ingredients You Will Need To Make Vegan Shortbread
If you think that I will give you Mrs. Mclintock’s recipe, you are dead wrong. What I will give to you is a recipe made in heaven. So here is a list of the ingredients you will need to make vegan shortbread cookies;
- Softened ¾ cup sugar
- 1 teaspoon vanilla divided
- 2¼ cups of any flour of your choice
Yes, you only need 3 ingredients. Please make the dough the night before.
Procedure To Make Vegan Shortbread
In a large bowl, cream together margarine, ½ cup of sugar, and vanilla until well-combined. Then add flour in batches and mix until your dough is soft and smooth. Yes, that is how we want it. Then divide the dough into half, and shape each half into a log about 15 centimeters long by approximately 5 centimeters. Wrap each log in plastic wrap and refrigerate for 2 hours.
The next step to take is to preheat the oven to 375 degrees. Then line the baking sheets with parchment paper. Yeah, we are halfway there.
Take out the logs from the refrigerator and roll each log in the remaining sugar to coat. Using a knife, cut logs into 1/2 centimeters slices, rolling the log as you cut to maintain its shape. Put the sliced cookies on the baking sheets, and now let your artistic self take over the decorating process. P.s you can add dried fruit or nuts if you want.
Bake for 8 minutes or until edges is lightly browned. If you are baking more than one sheet, rotate the sheets halfway through the baking time.
Remove cookies from the oven and let cool for 5 minutes, then transfer to a cooling rack.
